味覚とは、舌の味蕾にある味細胞が味に関連する化学物質を受容し生じる感覚のことである。現在、日本で開発された味覚センサーの実用化が世界的に進展し、これによって、「化学物質の種類・濃度と味覚の関係」が数値化・情報化されるようになった。即ち、視覚情報や聴覚情報と同様に、味覚も客観的な情報として伝達可能になったのである。実際、味覚センサーを用いることで、食品メーカーや医薬品メーカー等は、既に、客観的な味覚情報をベースにした商品を製造している。

ここで、考えなければならないことがある。心で味わう味は、唯物論で、すべて解明されたのであろうか。

化学物質に由来する味は、舌の感覚器で決定され、脳へ味覚情報として伝達される。しかしながら、心で味わう味と脳へ伝達された味覚情報とは明らかに異なることに注意したい。心で味わう味は、味覚以外の視覚、嗅覚、触覚、聴覚にも影響されているし、更には、過去の経験や先天的・後天的な好みにも影響されている。心で味わう味には、その意味や価値を付与する或る種の感情も伴っており、極めて、主観的なものなのだ。

別の視点からも考えてみよう。例えば、ミラクル・フルーツを食べた後に、レモンをかじると、甘く感じる。ミラクル・フルーツによって、味覚機能・脳が感知する味覚情報に変化が生じると、心はレモンを甘く味わうのだ。このことから、心で味わうレモンの酸っぱさは、この世（縦横高に時間が加わった空間、物質と物質エネルギーに満たされ、物理や化学の法則に制御された空間）のレモンには存在していないことが分かる。

では、心で味わう味は、どこから来るのであろうか。ここからは、筆者の仮説である。この世からの感覚情報（複合）は脳に伝達され、心が受容する。これが引き金になって、あの世（時間と空間を超越した非物質的な領域）では、「伝達された感覚情報に先天的・後天的に広く関連する総体的な何か、意味や価値を作り出す感情をベースとする何か」が、瞬時に合成される。これこそが、心で味わう味なのだ。因みに、このことは、心が味わう味は、個人個人で微妙に異なるということも意味している。
